A feast whose order teaches as much as its taste.
The Kerala Sadya is a full vegetarian
meal served on a fresh banana leaf,
eaten while seated on the floor.
At its complete form it has around
26 distinct items. At its everyday
form it is simpler, but still structured.
The placement of each item on the leaf
is specified. The order of eating is
specified. The meaning of each item is
specified. This is not a meal that
happened to become traditional - it is
a meal that was designed.
The banana leaf is placed with the
narrower end to the left. Rice is
placed in the centre. To the left:
the sweet items. To the right: the
complex savoury items. The meal moves
from sweet to savoury to the final
rasam and buttermilk.
The sadya is structured according to
Ayurvedic principles about digestion.
Sweet items are easier to digest and
prepare the system. The heavier
savouries follow. The final rasam and
buttermilk are digestive agents.
After the meal, the leaf is folded:
toward you if it was a joyful occasion.
Away from you if it was a funeral feast.
Let the idea move immediately into prayer or temple ritual.
On Onam, wherever you are, making even a partial sadya - rice, sambar, one or two curries, payasam - on a banana leaf is the meal in its essential form.
